Do you like those recipes that are oh-so-easy to make and can easily top the list of your comfort food? Well then this post is perfect for you- Khichdi! It actually is so well incorporated into my cooking routine- almost has become a regular for me. And to my utmost surprise, it finds its place in more than one cuisines in multiple variants. Khichdi is basically a dish prepared with rice and lentils that is really fulfilling and healthy. It’s so good for your healthy diet routine, you’re gonna love it once you give it a try!
And it’s really very flexible as well- add or remove whatever veggies you want, any spices would do. I’ve added soya nuggets to this one. You can even try it with multiple lentils, be it split bengal gram or green gram- the ones I’ve used are the petite yellow lentils, feel absolutely free to experiment with the ingredients as much as you want. So here’s how you can make this simple recipe in no time-
Rice- 1 cup
Moong Dal(Split and Dehusked Yellow Lentils)- 1/4 cup
Cumin seeds- 1/2 tsp
Onions(sliced)- 1/4 cup
Potatoes(diced)- 1/4 cup
Green Peas- 2tbsp
Cauliflower- 5-6 florets
Salt- to taste
Red chili powder- 1/4 tsp
Turmeric powder- 1/4 tsp
Oil- 3 tbsp
How to make-
- Heat oil in a pressure cooker and add cumin seeds to it. When the seeds start to splatter, add all the veggies and dry spices to the oil and sauté for 4-5 minutes.
- Rinse the rice and add with about 4 cups of water to it and stir.
- Secure the lid and pressure cook for 1 whistle.
- Turn the flame to medium-low and cook for about 15-20 minutes. Serve with yogurt and pickles of your choice.
