I’m really late with this post for welcoming winters- additional household chores and the little one’s exams made it really difficult! But as they say, better late than never. So here I am with my winter special recipe. Now winters make it really hard for me to get out of the blanket and move to the kitchen, so I need something extremely tempting to get off my cozy lazy mode. And what’s better than a warm dessert to inspire one to get back to moving and working. The dessert I made this time is certainly a favorite to a majority of Indians- Gajar ka Halwa! Basically, a pudding made with carrots and milk, this dessert is sure to win your heart with its easy yet mouth- watering composition. And added advantage- you can simplify the recipe as much as you want!
Traditionally, gajar ka halwa is made with carrots and khoa/mawa. For those of you unfamiliar with it, mawa is actually a dairy product made by reducing milk to solid by constant heating and thickening. But if you can’t find mawa or prepare by yourself (believe me, it takes a WHOLE lot of time!), you can susbtitute it with condensed milk. Also, some versions of this dessert even have ghee (clarified butter) as an ingredient, but I never add it to my halwa- gets too heavy and doesn’t really work for me.
So, here’s the complete recipe to this amazingly simple dessert. Happy Winters!
Ingredients-
Carrots (grated)- 2 kg
Khoa/Mawa- 400 gm
Sugar- as per taste
Fresh cream- 5-6 tbsp
Mixed Nuts (chopped)- 1/3 cup
How to make-
- Pressure cook the grated carrots for about 5 minutes
- Transfer the carrots to a wide pan and heat on high flame till all the water/juices evaporate
- Add sugar, mawa and nuts along with fresh cream to it
- Stir and mix all the ingredients
- Take the halwa off the flame and serve hot
