Pinni- perfect punjabi dessert for winters

I’m on a spree taking my mother’s recipes back to the kitchen and it feels amazing- reminds of the simpler times, my family loves it, and it is something different from the everyday cooking that feels too monotonous at times. So, the recipe I tried this time is the ever amazing- Pinni. For those of you unfamiliar with it, Pinni is a Punjabi winter essential made from whole wheat flour, clarified butter (desi ghee), jaggery and a whole lot of mixed nuts. My mother used to make these in enormous quantities and we would spend most of our winter evenings enjoying these delicacies. And the best thing about these is they have an amazing shelf life- they don’t go bad for long even without any preservatives or refrigeration.

Here’s how you can make this delicious dessert and stop worrying about what to eat for the rest of the winters-



Whole wheat-1 kg
Clarified butter (ghee) -1 kg
Jaggery-1/2 kg(chopped)
Almonds-250 gms(chopped)
Cashew -100 gms(chopped)
Raisins-50 gms
How to make-

  1. Heat ghee in a large pan and add the whole wheat to it.Roast it on medium flame for at least an hour while stirring continuously
  2. When this mixture starts changing color, take it off the heat and add jaggery along with the nuts and mix well
  3. Roll this mixture into small balls and serve when it cools down
