Beet Bites

Hey everyone, Welcome to foodbymama- a homemaker’s guide for those who love food and cooking and basically everything about it. I try using the simplest ingredients to create finger- licking recipes for my family. And like every other kid, my little one tries running as far as possible from healthy veggies. So, this other day I was thinking of some way to make him try beetroot and as stubborn as he is, I couldn’t get him to impress with the vibrant color of it. And these Beet bites were what finally worked (Pheww!). So here’s how to make these delicious bites-

Ingredients-

Beetroots (peeled and washed) – 2

Potatoes (peeled and boiled) – 2

Crushed peanuts- 4 Tbsp

Bread crumbs- 4 tbsp

Salt and pepper- to taste

Green chilies (finely chopped)

Fennel seeds- ½ tsp

Oil- to fry

How to make-

  1. Grate the peeled beetroots and squeeze the juice out of it- you don’t really want the bites to be soggy.
  2. Mash the boiled potatoes and add it to the strained and grated beetroot. Mix all the remaining ingredients except for half of the breadcrumbs.
  3. Add more of the bread crumbs if needed, just enough for the mix to stay bounded. Make small balls or any shape that you like out of it.
  4. Coat the bites with the remaining of the bread crumbs and deep fry. I used air frying instead of deep frying in oil for an added health quotient, but deep frying works just fine.
